Coconut Chai-Spiced Overnight Oats


½ cup old-fashioned rolled oats

½ cup water

Pinch of salt

3 tablespoons unsweetened coconut milk

2 tablespoons toasted unsweetened coconut chips

4 teaspoons honey

¼ teaspoon ground cinnamon

⅛ Teaspoon ground ginger

Pinch of ground cardamom

Pinch of ground pepper


  1. Combine oats, water and salt in a jar or bowl and stir. Cover and refrigerate overnight.
  2. In the morning, [heat the oats, if desired, or eat cold] Top with coconut milk, coconut, honey, cinnamon, ginger, cardamom and pepper.
