“Low Cal Lemony Chicken with Vegetable Couscous”

Healthy Recipe – “Low Cal Lemony Chicken with Vegetable Couscous” by Rejoice Wellness !

1)4 boneless, skinless chicken breasts
2)2 lemons
3)2 garlic cloves, crushed

For Vegetable Couscous
1))2 medium carrots
2)1/2 cup diced celery
3)1 onion, finely chopped
4)1 red bell pepper
5)2 tblsp olive oil
6)1 medium zucchini, diced
7) 1/2 cup fresh basil leaves or 4 teaspoons dried basil
😎 salt and pepper for taste
9) crushes garlic
10) 1 cup uncooked couscous
11) vegetable or chicken stock

1)Season the chicken generously and coat in the finely grated zest and juice of 1 lemon and the garlic.

2 Heat a non-stick pan and pan-fry the chicken for 10 mins, turning as needed.

3)To make the couscous, in a large bowl sauté the carrots, celery,onions and bell peppers in oil for 5-6 minutes or until vegetables are crisp-tender.

4)Add zucchini, basil, salt, pepper and garlic. Stir in couscous.

5) Add broth, bring to a boil. Cover and remover from the heat. Let stand for 5-8 minutes. Fluff with a fork and put it on the plate.

6)Put the rest of the lemon into wedges and serve with sliced chicken, couscous and a mint sprig.
