Bajra Dahi Raita [Pearl Millet Curd Salad]
Ingredients
4 to 5 servings
1. 1/4 cup bajra (Pearl Millet)
2. 2 cup curd
3. 3/4 tsp salt
4. to taste honey
5. 1 tablespoon chopped coriander
6. 2 green chilies chopped
7. 2 tablespoons chopped onion (raw)
8. 2 tablespoons chopped spinach (raw)
9. 2 tablespoons chopped capsicum (raw)
10. 2 tablespoons chopped Brocoli (raw)
11. 1 1/2 tsp oil
12. 1/2 tsp mustard seeds
13. 5-6 curry leaves
14. 2 whole dry red chilies
Steps
1. Soak bajra overnight.
2. In the morning pressure cook it with salt up to six whistles, till tender and slightly mushy.
3. Take curd in a bowl. Beat slightly and add salt, honey, coriander, chilies and all the vegetables. Mix well.
4. Add cooked Bajra to the above mixture.
5. Heat oil, add mustard seeds, when they crackle add curry leaves and dry red chilies. Add to the curd mixture. Serve cold.
