While you are on your weight loss journey you need not
rob of yourself of this happiness.

Creamy Mac n Cheese with a twist
Ingredients:
- 1 cup raw pumpkin cubes
- 4-5 garlic cloves
- 1/2 a cup veggie / chicken stock
- 50 g paneer / Tofu
- 2 tbsp coconut milk
- 2 tsp peri peri seasoning
- 1 tsp chilli flakes
- Salt to taste
- Wheat Pasta of choice – 200 g
- PS. : You can add veggies of your linking like carrots, peas etc. to make it more healthy
Method:
- Boil the wheat pasta of your choice, drain and keep aside
- Cook pumpkin with garlic, salt, veggie/ chicken stock and
enough water to cover. Cook it until soft. - Blend the cooked pumpkin and other ingredients in previous step with paneer, coconut milk and seasonings.
- Reheat this puree with some water and light salt until it turns to creamy consistency.
- Add in cooked pasta, mix well and serve hot.
