While you are on your weight loss journey you need not
rob of yourself of this happiness.

Creamy Mac n Cheese with a twist

Ingredients:

  • 1 cup raw pumpkin cubes
  • 4-5 garlic cloves
  • 1/2 a cup veggie / chicken stock
  • 50 g paneer / Tofu
  • 2 tbsp coconut milk
  • 2 tsp peri peri seasoning
  • 1 tsp chilli flakes
  • Salt to taste
  • Wheat Pasta of choice – 200 g
  • PS. : You can add veggies of your linking like carrots, peas etc. to make it more healthy

Method:

  • Boil the wheat pasta of your choice, drain and keep aside
  • Cook pumpkin with garlic, salt, veggie/ chicken stock and
    enough water to cover. Cook it until soft.
  • Blend the cooked pumpkin and other ingredients in previous step with paneer, coconut milk and seasonings.
  • Reheat this puree with some water and light salt until it turns to creamy consistency.
  • Add in cooked pasta, mix well and serve hot.
