Homemade Basil Pesto

Ingredients:

1 cup packed fresh basil

½ cup packed fresh flat-leaf parsley leaves

4 tablespoons hemp seeds / ½ cup roasted pumpkin seeds / 2 tablespoons soaked almonds

¼ cup fresh-squeezed lemon juice

1 clove garlic

½ teaspoon salt

¼ cup olive oil

Instructions:

1] Place garlic a food processor or blender and pulse until roughly chopped.

2] Then add the basil, hemp seeds/ roasted pumpkin seeds/ soaked almonds, lemon juice, salt, and pulse into a rough paste.

3] Turn on the food processor, and drizzle in the olive oil through the opening in the lid of the food processor. [If your food processor doesn’t have an opening add the olive oil to the container with the rest of the ingredients]

4] Let the food processor run until you reach your desired creamy consistency.

Note: Depending on the size of your food processor, you may have to scrape down the sides of the food processor.

Note: For storage, you can freeze the sauce by placing it in ice cube tray. Once freeze keep all pesto cubes in zip lock bag and in deep freezer. Thaw it before use.

Note: For making Thai variant use roasted peanuts and thinly cut red chilies.
