Homemade Granola

 

 

 

 

 

Ingredients
• 2 cups whole rolled oats
• 1/2 cup chopped walnuts
• 1/2 cup chopped almonds
• 1/2 cup coconut flakes, optional
• 2 teaspoons cinnamon powder
• 1/2 teaspoon sea salt
• 2 tablespoons melted ghee / coconut oil
• 1/4 cup honey / maple syrup
• 2 tablespoons creamy almond butter
• 1/3 cup dried cranberries / blueberries, optional
• 1/3 cup raisins, optional
• 1/3 cup chopped dried apricots/ dried Figs, optional

Instructions
1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
2. In a medium bowl, combine the oats, walnuts, almonds, coconut flakes, if using, cinnamon, and salt.
3. Drizzle in the ghee / coconut oil and honey / maple syrup.
4. Add the almond butter.
5. Stir until combined.
6. Scoop the granola onto the baking sheet and press the mixture into a 1-inch-thick oval. This will encourage clumping.
7. Bake for 15 minutes, rotate the pan halfway, and use a fork to gently break the granola apart just a bit.
8. Bake for 15 minutes more, or until golden brown.
9. Sprinkle with dried cranberries / blueberries, raisins, dried apricots/ Figs if using.
10. Let cool for 15 minutes before serving or storing in airtight container.
