Pickled ginger has many health benefits outside of simply being enjoyable alongside your main meal.

Adrak ka Achaar (Ginger Pickle)

Ingredients:

• 1/2 Kg raw ginger (kachi adrak)

• 13-15 Lemons (juiced)

• 2-3 tsp vinegar

• 3-4 tsp salt

How to Make:

1.Peel and julienne ginger.

2.In a jar add ginger, salt, vinegar and lemon juice. Shake the jar vigorously.

3.Let the achaar rest for an hour.

4.When the ginger is a little pink, it means the pickle is ready to eat.
