Oats Carrot Kheer





• 1 Cup oats
• 1/2 Cup grated Carrots
• 1 tsp ghee
• 1/2 litre milk
• 5-8 Deseeded Dates [as per taste] • 6-7 Almonds [cut into slices] • 2 Cardamoms [open a bit and add with peel] • 1-2 Banana / 4-5 Strawberries / ½ Mango / Any seasonal fruit [cut into pieces] [Optional] • 10-15 Raisins
• 4-5 pistachio [cut into slices] Procedure:
• Roast oats for 4 to 5 minutes. Keep aside.
• Add ghee to the pan. Saute grated carrot in the pan. Add 1 tap water, put lid and cook the carrot till it gets medium soft. Keep aside.
• Put dates in grinder with 2 tbsp milk. Make smooth puree.
• In a pan add milk, cardamom, dates puree, almonds and raisins.
• Boil for about 5 minutes.
• Add oats , carrot and let it boil until it becomes little thick.
• Once the kheer is done add fruit pieces if you like and serve hot or cool.
