
TOMATO CUCUMBER SALAD with a TWIST
Here is a yummy fun salad made with your everyday tomatoes & cucumber but with a healthy twist. This is a dish best served cold and immediately because the ingredients spoil fast.
Thus we wouldn’t recommend making this ahead, but it would probably keep in the fridge for a few hours.

TOMATO CUCUMBER SALAD with a TWIST
INGREDIENTS
• 2 small cucumbers, chopped
• 2 tomatoes, chopped
• bunch parsley, chopped
• 1/4 cup grated paneer
• 1 garlic clove, minced
• 1 1/2 Tbsp olive oil
• 1 tsp dried mint (optional)
• salt and pepper to taste
HOW TO MAKE
This salad really should take about 5-10 minutes. You simply:
• Wash the vegetables
• Chop everything
• Put in a bowl
• Toss to combine and that’s it!
