Buckwheat Bread

Despite its name containing the word “wheat” buckwheat is actually gluten-free and makes for delicious bread.
Ingredients:
- 500g hulled buckwheat kernels
 - 200ml water
 - 1/4 tsp salt
 - 2 tsp poppy and sesame seeds (optional)
 - Baking powder
 - Chia seeds (optional)
 - Sunflower seeds (optional)
 
Instructions:
- Rinse the buckwheat thoroughly.
 - Transfer to a large bowl.
 - Cover in cold water.
 - Cover with a cloth and let it soak overnight.
 - Drain (do not rinse)
 - Transfer to a blender with 200ml water, salt and baking powder
 - Blend, starting at low speed and slowly increasing.
 - Transfer back to the bowl.
 - Allow to sit covered at room temperature for 24 hours.
 - Preheat the oven to 350F (180C).
 - Add baking paper to a loaf pan, and transfer the dough.
 - Sprinkle poppy and sesame seeds/ Sunflower seeds/Chia seeds if using.
 - Bake for 90 minutes.
 - Allow to cool down, then slice and enjoy!
