Labneh balls (Makes 12-15 balls)

Ingredients:

* 1 kg curd

* 1 tbsp salt

* Around 150-200ml extra virgin olive oil

* Seasonings of your choice (chilli flakes mixed with a little Kashmiri chilli powder and Zatar. Or dried mint, sumac. Or have it plain.)

Procedure:

* โ Mix the salt and curd together.

* Take a large strainer, place at least 2 muslin cloths over it.

* โ Place a utensil underneath to collect the liquid that’s released.

* Pour the curd over the muslin cloth, tie it up and let it sit in the refrigerator for around 2 days.

* Once most of the liquid is drained out, divide the labneh into equal portions using a tablespoon.

* Rub your hands with olive oil and roll the portions into balls.

* Take seasonings of your choice in a plate and roll over the labneh balls in it, make sure they are coated evenly.

* Place the labneh balls in an air tight container and pour extra virgin olive oil over them.

* Storage: they last in the refrigerator for a good 2 weeks, as long as it’s stored in olive oil in an air tight container.
