Buckwheat Bread


Despite its name containing the word “wheat” buckwheat is actually gluten-free and makes for delicious bread.

Ingredients:

  • 500g hulled buckwheat kernels
  • 200ml water
  • 1/4 tsp salt
  • 2 tsp poppy and sesame seeds (optional)
  • Baking powder
  • Chia seeds (optional)
  • Sunflower seeds (optional)

Instructions:

  1. Rinse the buckwheat thoroughly.
  2. Transfer to a large bowl.
  3. Cover in cold water.
  4. Cover with a cloth and let it soak overnight.
  5. Drain (do not rinse)
  6. Transfer to a blender with 200ml water, salt and baking powder
  7. Blend, starting at low speed and slowly increasing.
  8. Transfer back to the bowl.
  9. Allow to sit covered at room temperature for 24 hours.
  10. Preheat the oven to 350F (180C).
  11. Add baking paper to a loaf pan, and transfer the dough.
  12. Sprinkle poppy and sesame seeds/ Sunflower seeds/Chia seeds if using.
  13. Bake for 90 minutes.
  14. Allow to cool down, then slice and enjoy!
