Green Sunny-Side Up Bun

Perfect breakfast recipe for a lazy rainy Sunday.
It is super easy, looks enticing, tastes yummy and is super nutritious.

You can also add grated carrot & crumbled paneer to add some colour and more protein to it.

Green Sunny-Side Up Bun

Ingredients:

  • Broccoli- 1 cup
  • Green Peas – 1/2 cup
  • Coriander – 1 hand-full
  • Red chilli powder – 1 tsp
  • Onion – 1 whole
  • Full Eggs – 3
  • Salt as per taste
  • Oil as required

Procedure:

  • Boil water and add the broccoli to it to blanch.
  • ⁠Remove the broccoli from hot water.
  • ⁠Boil the green peas.
  • ⁠Chop the onions in large pieces.
  • ⁠Add blanched broccoli, boiled green peas, coriander, chopped onion, red chili powder, salt to mixer grinder and grind it to corse consistency.
  • ⁠Separate egg yolk and egg white.
  • ⁠Add egg whites to green mixture.
  • ⁠Mix well.
  • ⁠Brush oil to frying pan surface.
  • ⁠Drop a ladle full of green mixture on pan.
  • ⁠Add a yolk at the centre of this.
  • ⁠Put the lid on the pan and let it cook for 2 minutes.
