Nepali Chukauni with a Healthy Twist
Ingredients-
- 1-1.5 cup curd
- 2 medium size Sweet potatoes (boiled)
- 1 Onion
- 1 tbsp Chili powder
- salt as per taste
- 2 Green chillies
- handful of Coriander (chopped well)
- 1 tbsp Mustard oil
- 1 tsp Methi Dana
- 2 Red chilies (Chopped)
Procedure-
- In a bowl add 1-1.5 cup curd & whisk until smooth.
- Then add 1/2 tsp red chilli powder, salt & mix it in well.
- Add, 2 medium boiled sweet potatoes chopped in cube, along with 2 green chillies finely chopped, 1 medium size onion (chopped thin along the length), handful of coriander & mix this well.
- Now for the tadka heat 1 tbsp Mustard oil.
- Add 1 tsp methi seeds & red chilli chopped to heated oil.
- Now add this tadka on the salad.
- mix well & then enjoy as is or with some millet rice
