One Pot Mexican Millet Bowl

During this exhausting busy schedule this One Pot Mexican Millets Bowl is definitely your go to recipe to get balanced meal with all nutrients and refreshing spicy tangy taste to wash off all the exhaustion.
One Pot Mexican Millet Bowl
Ingredients:
- Foxtail millets 1 bowl
- Black beans – 1 big bowl
- Corn kernels – ½ Bowl
- Oil 1 tbsp
- Onion – 1 medium size – Cut in thin verticle slices
- Bell Papers – Yellow, Red n Green – 1 small each – Cut vertically in thin slices
- Tomato Puree – 1 bowl
- Zucchini – Cut in thin slices
- Chili flex – As per taste
- Oregano – As per taste
- Salt – As per taste
- Dollop of Guacamole
- Dollop of Hung Curd
Procedure:
– Cook the Black beans and keep aside
– Steam Corn kernels and keep aside
– Cook Foxtail millets and keep aside
– Take some oil in a sauce pan & sauté onions for 2-3 mins
– Add in bell peppers and sauté further.
– Then add in tomato purée, zucchini Chilli flakes, oregano, cumin powder salt & cook for 3-4mins
– Lastly add in cooked beans, steamed corn kernels & cooked millets
– Mix gently and serve with some hung curd and guacamole
