These yummy, healthy, vegan, butter free ‘Butter Cookies’ are the perfect treat to celebrate your friendship!

Vegan, butter-free Butter Cookies


Ingredients:

  • 1 can of butter beans/ giant beans/ lima beans (or 240 g cooked beans)
  • ½ cup (ie. 75 g) almonds, roasted
  • ⁠ ½ cup (80 g) dates, de-seeded, pitted and soft
  • ⁠1 tsp vanilla extract
  • ⁠1/2 tsp Salt

Method :

  • Take beans in rinsing vessel and rinse well.
  • ⁠Drain dry and keep aside.
  • ⁠Add almonds to food processor. And crush till coarse powder is formed.
  • ⁠Add beans to crushed almonds.
  • ⁠Add dates to the food processor and crush it with other ingredients until smooth paste is formed.
  • ⁠Add Vanilla Extract and salt to the mixture. And mix well.
  • ⁠Now on baking sheet put the mixture in a cookie shape through piping bag.
  • ⁠Bake it for 350 degree F / 180 degree C for 20 minutes.
