Egg – Cucumber Salad Boats
Ingredients:
- 6 medium to hard boiled eggs
 - 1/2 an avocado, crushed to paste
 - 1 tablespoon Dijon mustard
 - 1/3 of a small red onion
 - 1/3 cup fresh parsley
 - black pepper powder (as per taste)
 - 1 tsp onion powder
 - 3-4 garlic cloves crushed
 - salt to taste
 - 2 cucumbers, sliced in half lengthwise with seeds removed.
 
Process :
- Chop all ingredients (other than the cucumbers) together on a cutting board until everything is finely chopped and evenly incorporated.
 - Add seasoning to taste, mix well.
 - Fill in the cucumber boats with the egg mixture.
 - Serve and enjoy!
