Egg – Cucumber Salad Boats

Ingredients:

  • 6 medium to hard boiled eggs
  • 1/2 an avocado, crushed to paste
  • 1 tablespoon Dijon mustard
  • 1/3 of a small red onion
  • 1/3 cup fresh parsley
  • black pepper powder (as per taste)
  • 1 tsp onion powder
  • 3-4 garlic cloves crushed
  • salt to taste
  • 2 cucumbers, sliced in half lengthwise with seeds removed.

Process :

  • Chop all ingredients (other than the cucumbers) together on a cutting board until everything is finely chopped and evenly incorporated.
  • ⁠Add seasoning to taste, mix well.
  • ⁠Fill in the cucumber boats with the egg mixture.
  • ⁠Serve and enjoy!
