Grain free fried noodles ( one pot meal)

Ingredients:
  • 1/2 medium sized cabbage
  • 1 carrot
  • ⁠2-3 Spring onions with greens
  • 1 capsicum
  • 1 red bell pepper (optional)
  • ⁠1/2 bowl sprouted Moong / Matki (half boiled)
  • ⁠2 whole eggs
  • 1 egg white
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tbsp oyster sauce
  • 1 tsp soya sauce
  • Salt as per taste if needed
  • Black pepper powder as per taste
  • 1-2 tsp oil

P.S. : you can replace scrambled eggs with stir fry paneer ( for vegetarians) and with stir fry tofu ( for vegans)

Procedure:

  • Cut the cabbage vertically in thin strips and keep aside.
  • Cut the carrots in half and then vertically in medium thick strips and keep aside.
  • Cut spring onions in small rings and keep aside.
  • Cut the capsicum and red bell paper in vertical strips and keep aside.
  • In a nonstick pan heat few drops of oil and scramble the eggs with salt, pepper and keep it aside.
  • Heat oil in a pan.
  • Add ginger, garlic and 2/3rd quantity of cut spring onions.
  • Next add cabbage, boiled sprouts, capsicum, red bell pepper and carrot.
  • Stir fry until it’s soft (do not overcook)
  • Add the sauces and stir fry on high heat for 2-3 mins
  • Now add the scrambled eggs on top.
  • ⁠Add the remaining spring onion greens to garnish.
  • Serve hot.
